Lara Bars with a Twist

I normally buy Lara bars by the box when I am in Wasilla or Anchorage.  Having not been in either place for quite some time, my supply was depleted and I was in need of an energizing afternoon snack. I figured raw bars couldn't be too hard to make, based on the minimalist ingredient list (and the numerous blog posts bouncing around the internet).  I challenged myself to incorporate three ingredients that had been lying dormant in my cupboard:  dried yacon, goji berries, and Madagascar Bourbon Pure Vanilla Extract.

The ingredients I used:

1 cup walnuts
1 cup pecans
1 cup chopped dates
1 cup chopped dried Turkish figs
1/2 cup goji berries
1 cup dried yacon
2 T Madagascar Bourbon Pure Vanilla Extract

Madagascar Bourbon Vanilla Extract

Mix all ingredients in a food processor.  Press mixture into a glass pan, freeze, and then cut into desired shape.

*This recipe made about ten servings for me
**Feel free to use any dried fruit in place of goji berries and yacon
***If your mixture is too dry, add 1 T of coconut oil
****Wow!  Nielson-Massey's vanilla bean paste is tasty.

Obviously, the bars are rather high in calories, in case this is concern for you.  Personally, I like to eat a serving about an hour before a tough workout.
